I hope you guys enjoy this recipe for bacon cheese sauce! It gets a little clumpy after it cools down, so I do encourage you to serve it immediately. If you want to just pick up a spoon and go to town, I won’t judge. This cheese sauce for broccoli is great on cauliflower or carrots, too! You could add in a little more milk and serve it with cooked elbow macaroni, if you wanted to go the carb route. Add in bacon pieces and serve immediately. Stir constantly until the cheese is melted and sauce is thickened. Reduce heat to medium-low and add in cheese. Keep whisking until you have a smooth roux. Stir until flour has absorbed all the drippings, then slowly pour in milk, mixing constantly with a whisk. Turn heat to medium and sprinkle in flour. Remove bacon, leaving fat drippings in pan. There are a ton of great recipes in this cookbook, but when I see words like “bacon” and “cheese”, I tend to gravitate towards such words. At first, I was a bit overwhelmed by the sheer volume of it, but once I got digging around in the bins, I became pretty excited. It was my grandmother’s, aunts and father’s entire life collection.
